1lb vanilla wafers (crumbled)
1 can evaporated milk (refrigerate over night)
1 small pkg lemon jello
1 1/4 cup boiling water
1/2 cup sugar
1 small can crushed pineapple (drained)
1 small jar maraschino cherries, chopped (save some juice)
1 cup chopped walnuts
Boil water, add sugar and jello, mix til dissolved. Let set in refrigerator until jello mix is syrup consistency (about 1hr)
Pour chilled evaporated milk into large bowl. Mix with hand mixer until fluffy. Add jello mix that is now syrup consistency. Mix well. Add drained pineapple and chopped cherries. Add enough juice from the cherries to turn your mixture a light pink. Add 3/4 cup chopped walnuts. Mix well. Line a 9x13 baking dish with vanilla wafer crumbs. Pour pudding mixture over the wafer crumbs. Sprinkle remainder of wafer crumbs and 1/4 cup walnuts on top. Chill and serve.
