Nanny’s Marble Loaf


½ cup soft butter
1 cup white sugar
2 large eggs
1 tsp salt
½ cup milk
1 tsp vanilla
2 cups flour
2 tsps baking powder

Add all ingredients in the order listed. Stir by hand, or use a mixer of choice…I used my Kitchen Aid. Once mixed, take half the batter and move to another bowl.
In the ½ reserved batter, add the following and mix well:
1 ¼ tsps cinnamon
½ tsp nutmeg
½ tsp cloves (optional)
3 tbsps molasses
Line a loaf pan with parchment paper and lightly coat with cooking spray.
Alternate a large tbsp of light and dark batter on each side of the loaf pan and repeat until all batter is used.
The batter is quite thick so do not be surprised! Bake at 350 for 50 to 60 minutes until you insert a knife into the cake and it comes out clean (meaning there is no raw batter on it).




My Nanny always topped this with her Brown Sugar Icing:
Icing
5 large tbsps brown sugar
3 tbsps butter
2 tbsps cream or Carnation Milk
½ cup coconut
Add all ingredients except the coconut and stir on medium low until boiling point. Boil for 3 minutes stirring constantly. Add Coconut. Pour over cake while the cake is cooled a bit, and the icing is still warm.
Note: I often double the icing cuz my fans love this icing….lol….a.d I add chopped pecans on top just for fun.
The texture is more like a heavy loaf than a cake….so do not be surprised.
