Nanny’s White Cake With 7-Minute Frosting


Cake Ingredients:

2/3 cups softened butter
1 cup white sugar
2 eggs plus 1 egg yolk
1 tsp lemon extract
1 tsp vanilla extract (pure)
1 cup milk
2 cups flour
2 tsps baking powder

With a hand mixer blend butter and sugar. Add extract and milk, blend again. Add flour and baking powder and beat well. Spray two 8 inch cake pans with cooking spray. Divide batter in two and bake until tooth pic comes out clean once inserted….start with 25 minutes, and time accordingly at 350 degrees. ALLOW TO COOL BEFORE ADDING THE 7- MINUTE ICING.

7-Minute Icing
2 egg whites
2 tbsps cold water
2 tbsps corn syrup
1 cup brown sugar
1 tsp vanilla


Blend together and beat with a hand mixer on low over a double boiler for 7 minutes with an inch or more of water in the bottom of the first post….topping with the second one full of ingredients. The water should never touch the bottom of the second pot! If you do not have a double boiler…add water to the bottom of a pot….an inch or two….then top with a pyrex or metal bowl that fits tight on top of the pot. BEAT CONTINUALLY FOR 7 MINUTES…or until fluffy and stiff. Put the burner on medium.
My grandmother usually put homemade raspberry jam better the two layers and then put the icing on the cake…..you can put icing between the two layers instead if you choose.
