125g Butter
3/4 cup icing sugar
1 beaten egg
1 1/2 cup self raising flour
1/2 tsp vanilla
4 sliced, peeled apples or 1 big can apples
Brown Sugar for apple
(Knob of butter and cinnamon optional)

Preheat oven to 150 degrees
Cream butter and sugar
Add egg, flour and vanilla
mix well
Divide mixture into two
Press half into greased or lined tin
Poke holes in top
par-bake until very lightly golden
Remove from oven allow to cool slightly
Cook apples in an uncovered saucepan with about half a handful of brown sugar, knob of butter and cinnamon. No need to add water as apples brew in own juices
Top cake with apples
Press other half cake dough on top
Poke holes in the top
Bake 30min or until pale golden
