Sloppy Joes


1 lb. ground beef
1/2 bell pepper, diced (I used orange which I had on hand)
1 small onion, chopped
1/4 tsp. celery seed
1 tsp. dry mustard
1 tsp. my house seasoning (equal parts garlic powder, onion powder and black pepper)
1 tsp. Worcestershire sauce
2 T. brown sugar
3/4 C. ketchup



Brown the ground beef in a skillet, drain the grease and stir in the bell pepper and onions. Cook for 5 minutes, reduce the heat to medium and stir in the celery seed, mustard, house seasoning, Worcestershire sauce and brown sugar. Add the ketchup and mix well. Cook for 2-3 minutes, stirring over low heat.

Peanut Butter Pie


1 chocolate pie crust
8 oz. cream cheese, room temp.
1 1/4 C. powdered sugar
1 C. creamy peanut butter
1 regular size tub cool whip


Beat together the cream cheese and the powdered sugar. Add in the peanut butter and beat again to combine well. Fold in the cool whip, mix well. Pour into the pie crust and refrigerate for 6 hours or overnight.

COOKIES AND CREAM



1 bag Oreos, crushed 
8oz cream cheese, softened 
1/4 cup butter 
1 cup powdered sugar 
3 cups milk 
2 sm boxes instant vanilla pudding 
1/2 tsp vanilla 
12 oz Cool Whip, thawed 


Cream together cream cheese, butter & powered sugar & vanilla. In separate bowl mix milk & pudding chill until set. Fold in cool whip after pudding has set. Add cream cheese mixture, layer with Oreos... Chill until ready to serve!

Mimi's American Chop Suey


Ingredients:

Servings:4
1 1/2 cups dry elbow macaroni
3/4-1 lb hamburger
1/2 medium onion (chopped)
1 (8 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup
salt and pepper (to taste)


Directions:

1*Cook the macaroni till done, but not overdone.
2*Heat a skillet and fry hamburg and onion will done.
3*Add the tomato sauce and tomato soup; mix well.
4*Add the marcaroni.
5*Heat and serve.

Corn Casserole


1 can whole kernel corn, drained
1 can creamed corn
2 eggs beaten
1 stick butter, melted
4 heaping T. all purpose flour
2 T. sugar
1/4 C. diced green pepper (you can use red, I only had green)
1 C. whole milk
1/2 C. shredded cheddar cheese
1/4 tsp each salt and pepper

Combine all ingredients and pour into a greased casserole dish. Bake at 350 degrees for 1 hr. 20 min

italian meatloaf



1 lb. ground beef
1/2 lb. ground mild Italian sausage
1 small onion, finely chopped
1/2 C. chopped bell pepper (I used orange, it was all I had in the freezer)
1 tsp. olive oil
1 tsp. Worcestershire sauce
1 clove garlic, minced
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. parsley
1 egg, beaten
3/4 C. Italian bread crumbs
2 slices white bread, crumbled
1 T. milk
8 oz. shredded mozzarella cheese, reserve 3/4 C. for topping
1/4 C. parmesan cheese
1 C. marinara sauce, plus 1/2 -3/4 C. more for topping







In a small skillet, heat the olive oil over med. high heat and sauté the onion and bell pepper for 3-4 minutes, remove from heat. In a large bowl, add the meats, onion and peppers along with all remaining ingredients reserving 3/4 C. mozzarella cheese for topping. Now, dive in there with the best tools God gave you, your hands and combine everything really good. Once it has all come together, place and mold the mixture in a baking dish of your choice. I used my oval Portuguese stoneware for ours. Spoon 1/2 to 3/4 C. of the marinara sauce on top and spread around. Place in a 400 degree oven for 50 minutes. Remove from the oven and top with the remaining cheese and sprinkle a little dry basil over the top. Return to the oven for 10 more minutes. Make sure the meat is not pink before serving, baking time will vary depending on the thickness of your loaf. Mine was about 2" thick.

Mini Caramel Apple Streusel Cheesecakes


Ingredients:

Crust:
1⅓ cups graham cracker crumbs (I like Honeymaid)
2½ T. sugar
6 T. salted butter, melted

Streusel Topping:
½ cup flour
¼ cup quick cooking oats
¼ cup + 2 Tbsp light-brown sugar
¼ tsp ground cinnamon
⅛ tsp salt
¼ cup butter, partially melted in microwave

CheesecakeFilling:
16 ounces cream cheese, softened
⅔ cup sugar
2 eggs
¼ cup sour cream
1 tsp vanilla extract
1 lb apples, peeled, cored and finely chopped* (I used Gingergold)
Topping
Salted caramel sauce, homemade or jarred


Instructions:

Crust:

Preheat oven to 325 degrees. Line 18 muffin cups with liners.
In a mixing bowl, combine melted butter, graham cracker crumbs and sugar.
Divide mixture into liners and press down firmly o form little crusts.
Bake 5 minutes and cool.
Streusel:
To the melted butter, stir in flour, oats, brown sugar, cinnamon and salt. Stir until clumps form and park in the fridge while you make the filling.

Filling:

Beat cream cheese with sugar until smooth.
Add eggs until smooth.
Add sour cream and vanilla.
Assemble
Pour cheesecake batter evenly over the mini crusts.
Top with chopped apples evenly.
Sprinkle on streusel topping.
Bake about 25 mins.
Cool and chill in fridge a few hours.
Top with caramel!
